Simple & Delicious Banana Bread

This recipe is my go-to for simple and delicious banana bread. It is wonderfully moist, mouth watering tasty, and oh so easy! It's a family favorite.

If you read my first blog post, Molasses Cookies, I introduced you to my Great Grandma, Nanny. This is another recipe that was handed down by her. I can remember my Mom making this banana bread as a child. She'd usually make it in the evening and then we would wake up to fresh banana bread for breakfast. It was always a fight between the four of us over who got the "butt" pieces.


Now I get to share this super tasty banana bread with my husband and my own children (well, not the 8 month old yet, but soon enough he'll be enjoying it too). If you're like us, you wont eat bananas once they start turning brown. These over ripe bananas make the perfect banana bread! Even though we won't eat them, I never throw them away. It's an easy way to create less waste and make my family happy.


This is the perfect recipe for your toddler or child to help you make. My 2 year old loves to smash the bananas in a bowl. He helps me peel them and put them in a bowl and then I give him a fork to mash them. He loves to do it and it keeps him busy while I get the other ingredients ready.


 

The Ingredients



The Bananas- The best bananas for this recipe are over ripe ones. I find them perfect when they are spotted brown with some yellow left. I know they are ready when they peel super easily and the insides are nice and squishy. I usually use however many I have on hand, but not more than 3. I find more than 3 to be TOO moist. Nanny's recipe calls for 1 1/4 Cup of mashed bananas which equals about 3 smaller bananas or 2 larger ones.

Sour Milk- You can easily make sour milk by stirring 2 Tablespoons of milk and 1 Tablespoon of Vinegar together. I usually do this step first so it has time to sit.


1/2 C. Vegetable Oil

1 C. Sugar

2 Eggs, beaten

1 1/4 C. Mashed Banana

2 C. Flour

1 tsp. Baking Soda

1/2 tsp. Salt

3 Tablespoons Sour Milk (2 Tablespoons milk + 1 Tablespoon Vinegar)


 

Insructions


Serves: 10-12 Prep Time: 15 Minutes Cook Time: 50-60 Minutes


1. Preheat Oven- Preheat Oven to 350 degrees and grease a loaf pan.

2. Make sour milk by combining milk and vinegar. Set to the side.

3. Mash bananas and set to the side.

4. Mix Oil and Sugar- In a mixing bowl, mix together the oil and sugar.



5. Add Eggs- Stir in the eggs to the sugar mixture.



5. Stir in Remaining Ingredients- Add the bananas, flour, baking soda, salt, and sour milk to the sugar and egg mixture. Stir until just combined.



6. Cook- Pour the batter into the greased loaf pan and place it in the oven. Cook for about 50-60 minutes until a knife inserted in the center comes out clean. The top will be a nice golden, caramel color.



7. Let Cool and Enjoy!


See, I told you it was simple! We eat our for breakfast, dessert, snack, and we even use it as a potty training treat for out 2 year old, that's how much he loves it!
