Homemade Funfetti Cake

No need for a box mix, this recipe is quick & easy. My homemade Funfetti cake is to die for! It is delicious, moist, and full of color. I mean, how could all those pretty sprinkles not make you happy??

My crazy baby boy, Dawson, turned TWO on May 9th. What?? How is that even possible?!

I have always loved everything about birthdays from spending time with family and friends and the fun decorating to the party planning and the cake.

So of course I wanted to go all out for my sweet boy's birthday.


This was really strange time to throw a birthday party with social distancing and the Stay At Home Order in place. Normally, we would have the whole family over, cook something yummy, the whole nine yards. This year we opted for a drive-by birthday parade. Why not try something new? I figured Dawson would love this because he LOVES anything with wheels. The theme: TWO FAST! It went great!




 

The Cake


For decoration, of course the cake had to match the theme. I decided on a dirt bike cake because Dawson loves motorcycles (he has an electric dirt bike that he's been riding since he was 21 months!). I found a toy motorcycle on Amazon and iced the cake with orange buttercream to match and then mashed up three chocolate cupcakes to make a "dirt" hill. He thought it was so cool and couldn't wait to eat his "brap cake"!


Funfetti is the perfect birthday cake flavor for anyone, but especially for young children! It's a fun surprise inside, tastes great, and it isn't chocolate. I was definitely not making my already wild two year old a chocolate cake. He would have been bouncing off the walls!

I love that this recipe is easy to make. The only ingredient that I didn't already have on hand was the sprinkles. Another reason I love to use this recipe is that the cake is a little bit more dense than other cakes I've made and works very well for stacking cakes. At the same time, it is moist and delicious!


 


The Ingredients


3 C. All Purpose Flour - I use whatever brand I have on hand which is usually whatever was on sale at the store.

2 C. Sugar - Generally the same as flour, I use what I already have.

1 Tablespoon Baking Powder - Make sure you use Baking Powder, not soda. They aren't the same thing and shouldn't be substituted for each other. The baking powder helps lift the cake and make it fluffier. Baking Soda requires an acid to work, which this cake doesn't have.

1 1/2 C. Milk

1/2 C. Butter, softened - Make sure your butter is soft enough to mix well, but not melted as you don't want to add an extra liquid.

1 1/2 tsp. Vanilla - I always use pure vanilla extract, however, imitation vanilla extract will work too. I find that pure vanilla extract gives a much better taste.

2 Eggs - Eggs work best when they are room temperature. I always take my eggs out of the fridge before I get any other ingredients ready.

Buttercream Icing - You can use your favorite icing recipe or find the buttercream recipe I use over in the "Recipe" tab on the homepage.


 

The Recipe


Serves: 12 Prep Time: 15 Minutes Cook Time: 25-30 Minutes


1. Preheat the Oven- Preheat the oven to 375 degrees. Grease and line two 9 inch cake pans with parchment paper (this recipe works for cupcakes as well. In this case, line cupcake pans with about 30 cupcake liners).

2. Mix Dry Ingredients- In a large mixing bowl, add the flour, sugar, baking powder. Mix together until combined.



3. Add Milk, Butter, and Vanilla- Add the milk, butter, and vanilla to the dry ingredients. Mix on a medium speed until all the ingredients are combined well.



4. Add Eggs- Add eggs to the mixture and beat all together for about 2 minutes.



5. Add Sprinkles - After all the ingredients are combined, add the whole jar of rainbow jimmies. Use a spatula to fold the sprinkles in. Don't over mix or the sprinkles will dye the batter



6. Bake - Pour equal amounts of batter into the cake pans and pop them in the oven for about 25-30 minutes (Cupcakes take about 10-12 minutes) until a knife or toothpick inserted in the center comes out clean.



7. Cool - Let the cakes cool for a 10 minutes and then plop them onto cooling racks. Let the cakes cool completely before adding any icing. You can put them in the freezer if you need them to cool quick.

8. Frosting- After the cakes are completely cooled, ice and decorate them however you'd like.
